Beef with Tomato and Rice

An easy main dish for company
- Marinated Tomatoes
- 4-pound beef tip, bottom round or rolled rump roast.
- 2 1/3 Cups uncooked regular long grain rice
- 4 2/3 Cups water
- 2 tsp salt
- 1 tsp turmeric
- 1/2 cup chopped fresh parsley
- Prepare Marinated Tomatoes.
- Heat oven to 325°.
- Trim fat from beef roast.
- Place beef on rack in shallow roasting pan.
- Insert meat thermometer so tip is in center of thickest part of beef and does not rest against fat or bone.
- Roast uncovered, about 3 hours or until thermometer registers 160° (medium doneness.)
About 30 minutes before beef is done, heat rice, water, salt and turmeric to boiling; stir
once, cover and reduce heat. Simmer about 14 minutes, remove from heat; fluff rice
with fork. Cover and let steam 5 to 10 minutes. Stir parsley into rice. Cut beef into
1/4-inch slices, arrange on bed of rice, cover with Marinated Tomato. 16 servings
Marinated Tomatoes

- 4 med tomatoes, cut into 1/4 - inch slices
- 2 T olive or vegtable oil
- 2 T red wine vinegar
- 1/8 tsp salt
- 3 drops red pepper sauce
- 2 clove garlic, minced
Place tomatoes in glass or plastic dish. Mix remaining ingredients; pour over tomatoes.
Cover and let stand at room temperature about 3 hours.
