Pork Medallions with Asian Glaze

Don't limit the use of this flavorful glaze to pork. It's wonderful brushed on any
meat.
- Asian Glaze
- 6 pork bonless loin or center cut chops, about 1/2 inch thick (approx 1.5 lbs)
- Set oven control to broil.
- Spray shallow roasting pan with nonstick cooking spray.
- Prepare Asian Glaze.
- Trim fat from chops or loin.
- Place in pan, brush with 1/2 of glaze.
- Broil with tops 7 inches from heat for about 5 minutes (every oven is different so check often); turn, brush with remaining glaze.
- Broil 5 to 6 minutes, longer for medium doness (160°).

Asian Glaze

- 1/2 Cup of tomato puree
- 2 T lemon juice
- 1 T rice vinegar (or white vinegar)
- 2 tsp grated lemon peel
- 2 tsp finely chopped gingerroot
- 2 tsp reduced sodium soy sauce
- 1 tsp honey
- 1/2 tsp red pepper sauce
- 1 clove garlic, minced
- 1/2 cup beef broth (low sodium)
- 2 tsp cornstarch
- Cook all ingredients, except broth and cornstarch, in 1-quart saucepan over medium heat - 2 minutes; stir occasionally.
- Mix broth and cornstarch; stir into hot mixture.
- Cook about 2 minutes or until thick.
